  • 60ml heavy cream or milk
  • 5ml vanilla extract
  • 1 tsp orange zest (optional)
  • 50g chocolate chips

  • 15ml cream or milk
  • 1 tbsp coarse sugar or cinnamon sugar

  • 1 tbsp orange soda or milk
  • 1–2 drops vanilla extract

  1. Preheat oven to 200°C (400°F). Line a baking sheet or cast iron pan with parchment if using.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut in cold butter using your fingers or a pastry cutter until the mixture forms coarse crumbs.
  4. In a separate bowl, mix orange soda, cream, vanilla, and zest (if using).
  5. Add wet mixture to dry and stir gently until just combined. Fold in chocolate chips.
  6. Pat dough into a circle about 2.5cm thick. Cut into 6 wedges and transfer to pan.
  7. Chill the shaped dough for 20 minutes (this helps create flaky layers).
  8. Brush the tops with cream or milk and sprinkle with sugar.
  9. Bake for 18–22 minutes, or until golden and fluffy.
