Intro Paragraph: This strawberry banana bread started as a quiet idea in my kitchen — just me, a ripe banana, a few strawberries, and a blender. I wasn’t following a trend or measuring perfectly. I just wanted to use what I had, to make something nourishing for my kids. What came out of the oven surprised me in the best way.
Backstory: Soft, moist, and subtly sweet, this bread was an instant hit with my boys —They each gave me that look I live for as a mom: the happy, full-mouth “mmh!” that says, you did something right today. That moment alone made the recipe worth writing down.
There’s no added sugar overload here — just two tablespoons of light brown sugar and the rest comes from real fruit. The smoothie acts as both flavor and moisture, creating a bread that’s easy to slice and even easier to love.
Whether you serve it warm with butter, toast it in the morning, or pair it with a whipped cream cheese spread, this recipe is about more than just food. It’s a reminder that love can rise from the simplest things — like flour, fruit, and a little faith.
This bread was actually born from my Strawberry Banana Smoothie (No Sweetener) — I had some left over, and curiosity turned it into something beautiful. If you’d like to make the bread just like I did, start with the smoothie recipe here.
📝 Ingredients (in grams + cups):
- 350g (2¾ cups) all-purpose or bread flour
- 6g (2 tsp) instant yeast
- 5g (1 tsp) salt
- 300g (about 1¼ cups) strawberry-banana smoothie (lukewarm)
- 30g (2 tbsp) neutral oil or melted butter
- 25g (2 tbsp) light brown sugar
- Optional: 1 tsp vanilla extract
🥣 Instructions:
- In a large bowl, mix flour, yeast, salt, and sugar.
- Add lukewarm smoothie and oil. Mix until a sticky dough forms.
- Knead until soft and elastic (8–10 minutes), or use stretch-and-fold method.
- Cover and let rise for 1–1.5 hours until doubled.
- Shape into a loaf and place in a greased pan. Let rise again (30–45 minutes).
- Bake at 175°C (350°F) for 25–30 minutes, or until golden and hollow-sounding.
- Cool before slicing. Serve with butter, jam, or your favorite fruit spread.
🍓 Notes:
- The strawberry banana bread dough is naturally sticky due to fruit. Lightly oil your hands for easier handling.
- For a glossy top, brush with melted butter after baking.
- Want more sweetness? Add a swirl of jam or extra banana to the smoothie base.
